Cast iron cookie with brown butter by Tom Cenci

  • 125g butter
  • 170g brown sugar
  • 50g honey
  • 300g plain flour
  • 1 teaspoon Malden salt
  • 4g baking powder
  • 2 eggs
  • 300g chocolate chips
  • Plus another 75g butter for browning

Method

Preheat oven to 190°C

Cream the butter (125g) and sugar, slowly add the eggs to the mixer and continue to stir on low for another minute.

Add the flour, salt, baking powder to the mix until incorporated and then finish with the chocolate chips.

In a cast-iron skillet melt the extra butter (75g) over medium heat until the butter browns, about 3-5 minutes and allow to cool slightly.

Spoon the cookie batter into the iron pan and spread evenly around.

Bake in the oven for about 20 minutes. Allow the cookie to cool a little then dig in.
